Monita Tequila Margarita Cake Recipe
Ingredients:
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1 tsp kosher salt
12 Tbsp unsalted butter, room temperature, 1½ sticks
1 1/2 cups granulated sugar
2 large eggs, room temperature
2 Tbsp lime juice
2 Tbsp Monita Tequila
1 tsp vanilla extract
1 cup milk (non-dairy can be substituted)
Cake Syrup:
1/4 cup lemon juice
1/4 cup water
1/2 cup granulated sugar
Frosting:
8 oz package cream cheese, room temperature
1/2 cup unsalted butter, room temperature
1 Tbsp lime juice
1 Tbsp lemon juice
2 Tbsp Monita Tequila
5 - 5 1/2 cups powdered sugar
1 sprinkling of kosher salt
Instructions:
Preheat the oven to 325° F and spray the cake pan with non-stick spray.
Sift the flour, baking powder, and salt together in a separate bowl and sit to the side.
In another bowl cream the butter and sugar until light and fluffy (up to 5 minutes). Add one egg at a time, mix well after adding each egg.
Add lime juice, tequila, and vanilla extract. Mix until everything is blended.
Add half of the dry ingredients and half of the milk to the batter, stirring until just combined. Repeat with the remaining dry ingredients and milk.
Move the batter to the prepared cake pan and bake for 45-50 minutes or until golden brown and firm in the center. Let the cake cool for at least 20 minutes.
Prepare the cake syrup by combining lemon juice, water, and sugar in a microwave-safe bowl. Heat in the microwave for 20-30 seconds to dissolve the sugar.
Once the cake is cool, brush all of the cake syrup over the top of the cake.
In a large bowl, beat the cream cheese and butter until smooth. Stir in lime juice, lemon juice, and Monita Tequila (optional).
Gradually add cups of powdered sugar, mixing until light and fluffy.
Frost the cooled cake with the frosting. Garnish with a lime slice and it's ready to serve!
